Sucrose is obtained either from sugarcane or sugar beet.

In the manufacturing process, sucrose and stearic acid are mixed together at elevated temperatures between 100-200°C using a batch process. An acid catalyst is added which facilitates the nucleophilic substitution reaction between the hydroxyl groups of sucrose and the carboxyl group of stearic acid. The byproduct water is distilled out as the reaction proceeds.

Once the esterification is complete, the product is cooled down and acid catalyst is neutralized using alkali. Sucrose Stearate is then purified through solvent washes and filtration. The final product is a white to light yellow powder or flakes with low moisture content suitable for various industrial applications. Manufacturers ensure the product meets stringent specifications for properties like hydrophilic lipophilic balance (HLB) and purity.
